That's exactly what it is. A soft, enriched bun, filled with coffee cream, then coated before baking so the outside sets into a thin, crisp, coffee-flavoured crust that cracks when you bite it. Sea Salt Sourdough Roll — AED 12. A Korean-style roll: soft sourdough, butter folded through, a finish of sea salt on top. In Seoul this is sogeum-ppang, salt bread, and it's the most-searched Korean bakery item in Abu Dhabi right now for good reason. Ours is on sourdough rather than a plain white dough, which gives it a little tang under the butter.

Our classic croissants — butter, almond, cheese — come from Noble Bakery in Dubai, and we say so. What we make here is the sourdough croissant: the same lamination, but on a sourdough base, which gives a deeper flavour and a slightly more open crumb than a straight yeasted croissant. Sea Salt Sourdough Croissant is the one on the counter most mornings. If you haven't had a sourdough croissant before, this is the reason to.
Our kitchen starts at 4am. First job is baking off the bakery range for the day, then the team moves onto prepping fresh vegetables and sealing meats ready for service. From there, baking continues in batches right through until 10pm — so there's always something coming out of the oven rather than one big bake first thing and nothing after.
That's why the Coffee Bun is usually warm, why the rolls don't sit, and why the counter looks different at 4pm than it did at 9am.
Noble Bakery in Dubai supplies our sourdough loaves and our traditional croissants. It lets us bring in a couple of specific things we don't make in-house, while everything else — the buns and the sourdough rolls — is baked fresh on-site every day.
